Each lot is small — usually 60–120kg green. When it’s gone, it’s gone. Roasted weekly, never older than 14 days.
We work with importers we’ve known for years and, increasingly, directly with co-ops and farms. Two visits a year, samples cupped in our roastery, and every lot has a name behind it.
